Youtube Subtitles Vs Fixed Subtitles

Most definitely - I think it is because you can ensure nice sharp text

And put your own spin on it, Can you imagine if everyone used plain text for everything!

Yeah Youtube is not that best at subtitles.

I don't use Subtitles for the whole auditory... but do use "Captions" to maybe emphasise something I am saying or add as an after thought because I did not think of it at the time.... Tried turning on the YT ones and they were gibberish.

I'm not sure many people use YouTube subtitles. If your video needs it I'd hard code them in.
