Camera Color Settings?

Do you use the default color settings and let the camera do everything for you? Or do you record without anything done in camera and color grade in post?

It seems like color grading would add a lot of time into your work flow.

Do you mean color grading or color correction? Ones harder than the other, and not always necessary. I tend to do some color correction. A lot of my footage is in the morning before the sun's high or the sky is fully blue so some correction is added to tweak colors to look more normal, or to make a few things pop. I find less is more or you risk making things look worse if you have multiple shots and cuts.
