I'll second the Street Triple. Never owned one, but I used to have a Speed Triple and from what I've read the Street is probably the better all-round bike in most instances.
I've owned a SV650S as my first bike. Bags of torque but very athsmatic top end and only 70ish bhp. Take a look at a CBR600F-Sport. Bags of go faster bits and comfortable.
I actually got a chance to ride an SV 650 the other day and it was a pretty comfortable ride. It did have way more engine braking than I am used to, but I am sure I would get used to it.

Singles and twins do have some pretty harsh engine braking when you come off the throttle. You'd get used to it pretty fast - it's also a great opportunity to learn hwo to blip the throttle when you're downshifting.
