I recently was fearing the same problem what I'm doing wrong. I realize in hindsight the 4 moto vlogs I've posted are quite boring to the first time viewer: "just another guy nerding out and moaning about the world inside his helmet". Upon reading what google/youtube have to say about improving videos, I've had to take stock of what I'm filming and why. What the narrative is and how to tell the story. It's worth a read (take note of what it says about "first 15 seconds").
I think if you contrast what you're doing with say what AccidentalBroadcast is doing, you'll see he's either read that document well, or he's "naturally" good. I would be inclined to think he's just paid attention to what that book says.
