I ride with 3 cameras.  My main is a Drift Ghost S mounted on the right side of my modular helmet. On the left side I have my Sena bluetooth and a cheap Midland 720p camera facing rearward.  I run the Ghost on all the time but only turn on the rear camera if someone tailgates me.  I have a Midland 1080p camera on my handlebars facing me so I can get those cool riding shots (lol). I can easily point it to the left or right if I want.
This setup works well for me so far. I get lots of footage to use when editing. Now editing, that's where I need more experience.
