My first item to suggest would be a tire pressure gauge or a compressor with a gauge. Can't be safe if them tires aren't properly inflated

other than good bike clothing? Then a bike would be number one priority! :D

Seriously though, a little bit of basic understanding of basic motorcycle maintenance tasks (chain tightening/topping up oil/changing oil/filter)

A phone - Track, cell, smart - some way to call for help or assistance if needed.
A flashlight
Id/medical info - on your person or attached to your helmet.
Spare sunglasses/safety glasses - (I have them for any passengers)
A pen - useful for writing down something -- Lic. plate numbers, names
contact info, etc. ...

I forgot, i think is a good idea having a label (vinyl) on helmet with your name and blood type

I carry a small tool kit, 1qt of oil, and a set of jumper cables. On long trips I usually carry a spare 1 gallon can of fuel.

I'd guess you don't ride a supersport :D No possible way I'd be able to fit that on my bike :D
When I had my Husky SM510R supermoto I used to bungey a 5l can of petrol to the pillion seat when messing around in Scotland, meant I didn't need to fill up every 50 miles! :D

I don't take anything special with me, on the usual 1-2 day ride. It's a Japanese bike, so everything is tucked away so well, that even if something breaks, I would still have to tow it to somewhere, to repair it or have it repaired. I don't think I'd ever strip the bike to pieces, by the road. Safety vest maybe. That is in the bag all the time, so I don't think of it, as "taking it with".

I hear ya. Same with my bikes. None of them are easily serviceable. What I do take in my bag though is a tire pressure gauge and a scarf for any of them unexpected cold evenings. Other than that, nothing in the 'service' department. But I do have a few things in the garage and I guess the topic isn't tied to things that you would carry with you.

Ah, Indeed, when reading through all the answers, I forgot what the exact question is, and I had the impression it was, what essential stuff I carry with me, on the rides.
What I have aquired specially, related to my bikes, and riding, have been a small torque wrench, cleaning microfiber rags and bluetooth intercom.
I am also looking to buy a garage, to be able to access the bike during winter and do some maintenance work on it myself.
