Some of the most entertaining videos that I have watched usually involve cagers doing something stupid. You have to find your comfort topic. I have a tendency to revolve around motorcycle safety, upgrades, thoughts, and current surroundings. Write down a list of things that interest you and just roll with it. You don't have to post every video and every video doesn't need a narrative.

Play around and have some fun. In due time you will be rolling out quality videos.

What I would really like to see is a camera view from passenger since she is more perched up, head more mobile, etc...and I saw a what I'm pretty sure is a bluetooth headset on him, so if there was narration and FOV from her while having a dialog between you both about whatever your topic is, I would be very interested!

that is what we are trying to figure out on how to do with the last part if anyone has any idea of how to do this it would be greatly appreciated

I dunno what kind of equipment you use, but what I would do with my stuff is:

GoPro Hero 2 w/ mic plugged straight in for Her
A mic and and recorder for Him

In the editing software, the video and Her voice would be together already then just take the audio from him and sync the dialog by adding it to the video like you would music.

What cam setup and editing software are you using? (If you went over this in a vid I apologize, I watched them but kinda skipped through a bit...)

no we haven't done a setup video yet my software is skipping bad so i cant edit the video yet
we use a drift hd camera

i thought about that last night about running just a mic for me with a recorder but didn't know if it would be easy to pair the two
