Leave everything in. Touching the video is investing time in the editing booth. Most of the time I don't have that time. Also, over-cut video is not that engaging. I'll use that cut as an opportunity to close the video if it's not too interesting.

Stuff everywhere. There is no other way to work. I spent one week tidying up my workshop and after just this weekend, everything is a mess again. If someone is used to work in a tidy environment, they probably have no problem keeping it that way after hours of work. I'm messy and when I'm working the only thing I care about is finish the work at hand. I cannot invest time keeping things in their proper place.

I'm relating low level with computer terminology, the user interface is high level, the hardware itself is low level. So high level will be simple things like changing the mirrors, the fairings, colors, cleaning, mainly what doesn't take removing many bolts to get done. Low level will be getting real close and personal with the insides of your bike.
