Around 500 miles sounds about right to me if it's in the dry - in the rain I'd say every 200-300 miles. You can't really over-do it, but if you put too much on the chances are it will just fling off all over the bike (or the tyres if you're really unlucky).

As a side note, I have NEVER cleaned a chain in over 300,000 miles on bikes - only ever sprayed lube on. Most O-ring chains seem to last 12-20,000 miles for me, so I'm not complaining. The X-ring chains I've fitted were still going strong over 20,000 miles but so far I've either killed or sold the bike before having to replace one of those!

I'm using the newish Renthal Superbike chain at the moment which seems to be lasting even better than the x-ring chains.
 
Gotta agree with most 300 - 500 miles for chain clean and lube. Myself I use a spray on cleaner and a chain brush (big arse tooth brush) to get the hard bits of gunk out. I never use a rag as tiny bits of the rag can get stuck in the links and cause faster wearing and clotting of the lube.
I use a good chain oil based lube, I don't like wax as I find all sorts of things stick to the wax (dirt sand etc) and find it a pain to clean off the chain and bike splatter.

Oil change for the engine, I'm bad at this and do it every 5-7k. If you get a new bike remember to make sure you DO CHANGE IT AT 500miles.
