Just duplicate the mono channel from Left to right, that will imitate Stereo

Or buy a stereo mic.
 
I'm using the Olympus ME-52W Noise Canceling mic. It's the one Chaseontwowheels recommended so I'm not sure. Another problem I have with it is all sound goes away at higher speeds, the wind and my exhaust get so loud that the mic just kinda cuts all sound out. Which I don't get because chase has multiple vids at high speeds and you can hear the bike just fine and the wind isn't a problem.

I've use the olympus ME-52 and the Sony ECM-DS70P. The olympus is smaller but above all my favorite mic is a flexible mic I got off of amazon for $1.26. It's made for a PC but you can hide it in you helmet and the audio is awesome!

$50 mic according to Amazon? Do you have the link that you got your from?

I record my talkie bits via a digital recorder then add to video later..takes a while but sound is a lot better!
