Main thing is to ensure there's a couple of mm free play when the clutch is released. I prefer the bite close to the grip, makes slow control and reaching indicators easier.
If you want the middle with a new cable then you might want to set it slightly further out to allow for the stretching that will happen in the first few days otherwise you'll be adjusting it again soon after. It's also a sign of an old clutch cable - the bite happen really close to the lever.
Make sure your clutch cable tension is set correctly and then use the knob on the clutch lever to adjust the point where the clutch "bites" to your preference. For bikes that do not have the adjustable knob, then cable tension is all you can use, usually there should be a minor slack/free play of about 2-3 mm if not mistaken.
I have mine as far out as it can go while still properly disengaging and leaving the recommend amount of mm's of free play. This is just so I can properly engage the clutch with two fingers (it still doesn't engage 100%, but there's nothing I can do about that).
