As you can see, we all like different things, so experiment and see what style you prefer. @Drakhen99 mounts his camera on the side of his helmet which is effectively always in shot, whereas I run my camera as a chin mount so I am not in shot at all, he also rides a big faired bike which combined with his head being in shot probably helps lose the floaty feeling, where I have a naked road bike and dirtbike, it is only my adv bike that has a screen, so with nothing in front of me showing I am on a motorcycle at times, it can look quite floaty if I have my stabilisation set high.
Oh, that's a great point! Yeah, my bike and usually a small part of my helmet is always in frame.

You know... I ran a chin mount once... had to re-grow my beard afterwards :(

But in all seriousness, I got some compliments early on for my video's stabilization compared to other motovlogs the commenter had watched. So, I stuck with it. The downside to too much stabe is head checks or trying to show something way left or right of center - the GoPro will try to hold onto that straight-forward view, and it takes a couple of seconds of holding your head to the side to get the camera to actually show it.

Well crap. I posted this under the wrong post and only had 3 minutes to edit. Of course I didn't realize it until it was too late. Oh well. I did some more testing.

Here are some stats against the same Original GoPro RAW File 10.2GB 4K 60fps 10bit with 120,000,000kbps bitrate

capcut_70000_264.mp4 60fps bitrate 70000kbps Output File Size: 6.587 GB (bitrate customized)
capcut_85000_264.mp4 60fps bitrate 85000kbps Output File Size: 8.000 GB (bitrate customized)
handbrake_264.mp4 60fps bitrate 59000kbps Output File Size: 5.500 GB (self adjusting bitrate)

handbrake_265.mp4 60fps bitrate 26000kbps Output File Size: 2.420 GB (self adjusting bitrate)
davinci_265.mp4 60fps bitrate 70000kbps Output File Size: 6.555 GB (maxed every video quality setting possible)
capcut_265.mp4 60fps bitrate 45000kbps Output File Size: 4.269 GB (self adjusting bitrate)

Note:
No edits, just pure rendering with the wanted 4K 60fp settings.
265 on CapCut has no adjustment available on bitrate.
Original GoPro RAW File 10.2GB 4K 60fps 10bit with 120,000,000kbps bitrate

I'm currently downscaling video to 2.7k.
I wonder if there is any quality loss with going from 4k -> 2.7k when rendering vs just straight up recording 2.7K with the GoPro and rendering? Thoughts on this @Drakhen99

LOL, I see you found me on Discord! :D

No loss that I can see when going from a 4k file to 2.7k rendered output. It allows more zoom before you lose detail and sharpness - up to a certain point [where the 4k image itself has to be zoomed rather than cropped into the 2.7k timeline]
