I've gone narrative-heavy in my videos (travel-focused). A lot of edits to get right to the talking. If I'm doing a drone shot or some handheld footage, I'll throw up an audio track that fades in/out. Typically just short segments of that, spread across the video.
I haven't done any voice over in post yet, but I'm planning to do that for gear reviews, bike maintenance videos, or such.

All of mine have been fully narrated live so far, and I use jump cuts to cut out the moments of silence or when I am fumbling over my words.
I guess it depends on the point of the ride - if it's mostly scenery then I guess no narration works for short periods. But I (and it's totally personal) I find just watching a ride is boring without either voice over or music.

I like narrating while riding and just editing if I can. Haven’t tried the others. Will stick to narrating while I ride for now.

I think the way I consume most of my YouTube Content might be a little different than most. I typically queue up a bunch of videos and play them on a secondary computer monitor while I work. I'm not usually fully focused on the video, rather passively glancing at it while I listen to what is going on. Because of this, scenic rides with long periods of music don't really work for me personally.
I'm still very new to Motovlogging (recorded my 3rd last night) so I haven't gotten into post production too much. I've narrated everything on the bike so far.
My problem is that after a few seconds of silence, my brain starts screaming "SAY SOMETHING! THERE IS TOO MUCH DEAD AIR!" - then I start rambling, getting off topic, and fumbling over my words. Editing has been a joy (I say that sarcastically) as I realize I've said the very same thing three different ways.

I think the way you fill silence works quite well - cycling through different camera angles adds a lot of depth

I have not set up my camera so that I can narrate live yet, and I agree that just a bike ride in most instances is boring as hell , so I mostly throw on a musical track

I have had to do a few voice over vids recently, partly due to C19 and not being able to ride, but also due to audio issues. I hate them, and I avoid voice overs like the plague if I can when creating as it just feels wrong to me. I have seen it work well for folk, one of my mates narrated a trip into eastern Europe which worked really well for him, but I don't like it for myself, and unless I know the content is going to be great, I am often put off by it in videos I watch.
I much prefer to talk while riding, it feels far more real and natural... and often far more enthusiastic... it is hard not to be happy and positive about stuff when riding, and I generally will chose positive and upbeat content to watch over road-rage and angry vids.
As for music.... If I am invested in the creator, I'll probably mute it and put it on 2x playback speed, if I am not invested in the creator, I'll find another video to watch. Sounds kinda harsh, but unless you like the tune they are using (which if using free generic music is not very likely) then I'll probs just move on. It'd be better to just have the engine noise (without the wind) than have music only.
In all occasions there are exceptions, and I have done vids with just music (spannery ones mainly) and I have done voice overs too.
