@LoneWolfer has a video on his channel. He showed me it in person. It involves two mics and 3.5 (two female to one male). One mic by the ear piece in the helmet and the other on the chin bar.

They plug into the splitter and the splitter into whichever device for audio capture (his camera in this case).
