The ring is actually a great place to start. Its a LONG track (13 mi), lots of places to learn and push slowly especially on a bike. You can also just show and go, no need for reserved track days. Time of year is more critical due to moisture!

I've been running a modded case for external audio since day 1 no water issues, although never been submerged. Snow, ice, rain yes. I only cut the portion for the adapter to fit nice and snug.
A good audio recorder is definitely the superior method IMO. I remember Accidental Broacast attached a Zoom recorder to his helmet :D Its worth the production value if you have the subs to back it. That being said I still just use my USB mic
